Watermelon Fruit Cake
- 6 triangle slices of watermelon
- 500g Cocobella Natural coconut yoghurt
- Handful shredded coconut
- Few sprigs of fresh mint
- Fresh rockmelon, strawberries, kiwi, pineapple, and mango cut into pieces
- 1/3 cup blueberries
- 1 tablespoon passionfruit pulp
- Arrange the slices of watermelon on a plate and dollop the coconut yoghurt on each slice.
- Top with the fresh fruit, and garnish with shredded coconut and mint leaves. Serve chilled, and enjoy!
