Vegan cheezy spinach & artichoke coconut yogurt dip

Ingredients

  • 3 cloves of garlic
  • 1/2 brown onion
  • 1 can of artichokes
  • 100gr frozen spinach
  • 1 cup baby spinach
  • 1 cup Cocobella Natural coconut yogurt
  • 4 tbsp nutritional yeast
  • 1 tsp Salt and pepper – to taste.
  • 1 tsp paprika
  • 1 tsp olive oil

Method

  1. Finely dice your onion and garlic and cook in a pan on medium heat with a little bit of olive oil.
  2. Once the onion and garlic are cooked, add in the finely chopped canned artichokes and frozen spinach. Stir together on medium heat until spinach is thawed.
  3. Add in the baby spinach, nutritional yeast, paprika and stir together. Stir until baby spinach is wilted.
  4. Add in Cocobella Natural coconut yogurt and stir together in the pan on low heat. Combine well and season with salt and pepper.
  5. Enjoy warm or cold with veggie sticks and seed crackers!
