Bircher muesli is a great way to have a quick, healthy and filling breakfast. I love making up a batch of bircher muesli mix to have in the cupboard for when I need to have a speedy breakfast ready the next morning. Loaded with healthy fats from the seeds and nuts, a good dose of omega-3 fatty acids, fibre, electrolytes and probiotics for a healthy tummy. Soaking this mixture overnight in Cocobella Straight Up coconut water and Cocobella Coconut Yoghurt makes it easier to digest plus activates the seeds and nuts (breaks down some of the phytates), meaning you’ll get more nutrition from this powerhouse bowl. This cooling coconut-y version topped with tropical fruits will leave you feeling so satisfied all morning and have your digestion fired up for the day.

Ingredients
2 Cup oats (GF option: rice flakes)
1 Cup shredded coconut
½ Cup crushed cashews
½ Cup slivered almonds
½ Cup sultanas
2 Tbsp pumpkin seeds
2 Tbsp chia seeds
2 Tbsp flax seeds
2 Tbsp sesame seeds
1 Tbsp cinnamon powder
To serve:
½ Cup Cocobella Straight Up coconut water
2 Heaped tablespoons Cocobella Coconut Yoghurt
¾ Cup diced, seasonal tropical fruits of your choice, suggested: banana, mango, papaya and dragonfruit.
Method
Add all the dry ingredients to a large jar, seal and shake to mix. Store sealed in a cool dry area and use as needed.
To serve, add ¾ cup of the bircher muesli mix to a bowl/jar with the coconut water and coconut yoghurt, stirring well to combine. Top the mixture with diced fruit, cover and refrigerate overnight. Simply remove from fridge the following morning, and your tropical bircher is ready to eat!
Tip: leave soaked bircher out for 2-4 hours the night before to allow the cultures in the yoghurt to continue to grow (for a bigger probiotic hit) then add fruit and transfer to fridge to cool overnight.
