Strawberry kefir Cake

  • Serves: 6-8 slices

Ingredients

  • 1 ½ cup plain flour
  • 2 tspn baking powder
  • ½ tspn salt
  • 1 cup Cocobella Kefir Probiotic Yoghurt
  • 1 cup caster sugar
  • 3 eggs
  • Zest of one lemon
  • ½ tspn vanilla
  • Juice of one lemon
  • ¼ cup vegetable oil
  • 1 cup chopped strawberries
  • Icing sugar

Method

  1. Preheat oven to 180 °C. Grease and line a 20cm round cake tin with paper.
  2. Whisk the kefir, sugar, eggs, zest and lemon in a large bowl.
  3. Sift in the flour, baking powder and salt. Stir to combine.
  4. Add in the oil and lemon juice. Stir until smooth.
  5. Add in the strawberries and stir to combine.
  6. Pour mix into cake tin and bake for 50 minutes.
  7. Cool
  8. Sift icing sugar over cooled cake.
  9. Enjoy!
