Preheat the oven to 180 degrees Celsius (fan-forced) and line a large baking tray with baking paper.
In a medium-sized mixing bowl, combine sugar, vegan butter, vanilla and Cocobella Vanilla Coconut Yoghurt, mixing until smooth.
Add flour, baking powder and salt and mix well – using a spoon or your hands if necessary.
Add chopped peaches, using your hands to work them into the dough.
Flour a clean kitchen surface, roll out dough until it is approximately 1 inch thick. Use a measuring cup or glass (or a similar round utensil) to cut the dough into circles, re-rolling out the dough as necessary. You should have 6-7 scones.
Place the scones on the baking tray and bake in the oven for 25 minutes.
Serve warm, with Cocobella Vanilla Coconut Yoghurt and apricot jam.
