Peach and Coconut Scones

Ingredients

  • 2 cups plain flour
  • 1/2 cup white sugar
  • 2 tsp baking powder
  • A pinch of salt
  • 1/2 cup vegan butter
  • 1 1/2 tsp vanilla extract
  • 1/2 cup Cocobella Vanilla Coconut Yoghurt (+ extra, as desired, to serve)
  • 1/2 cup peaches, chopped finely
  • Apricot jam, to serve

Method

  1. Preheat the oven to 180 degrees Celsius (fan-forced) and line a large baking tray with baking paper.
  2. In a medium-sized mixing bowl, combine sugar, vegan butter, vanilla and Cocobella Vanilla Coconut Yoghurt, mixing until smooth.
  3. Add flour, baking powder and salt and mix well – using a spoon or your hands if necessary.
  4. Add chopped peaches, using your hands to work them into the dough.
  5. Flour a clean kitchen surface, roll out dough until it is approximately 1 inch thick. Use a measuring cup or glass (or a similar round utensil) to cut the dough into circles, re-rolling out the dough as necessary. You should have 6-7 scones.
  6. Place the scones on the baking tray and bake in the oven for 25 minutes.
  7. Serve warm, with Cocobella Vanilla Coconut Yoghurt and apricot jam.
