Ingredients
2 cups self raising flour
1/2 cup brown sugar
2 tbsp rice malt syrup
1/4 cup vegetable oil
2 tsp vanilla extract
1/3 cup Cocobella Coconut Yoghurt – Natural
2/3 cup almond milk
1/3 cup passion fruit pulp
1/2 cup dairy free white chocolate chunks
To serve:
1/2 cup Cocobella Coconut Yoghurt – Natural
1-2 tbsp passionfruit pulp
1/4 cup dairy-free white chocolate chunks
Method
Preheat your oven to 180 degrees Celsius and line a muffin tin with patty pans. This mixture will make 6 large or 12 small muffins. Mix all the ingredients together in a large bowl, leaving the passionfruit and white chocolate chips to fold through last.
Spoon mixture into patty pans, and bake in the oven for 20-25min, or until a cake skewer can be inserted in the centre and pulled out clean.
Leave to cool and top with yoghurt, passionfruit pulp and white chocolate!
