Light and fluffy pancakes


  • 1 cup flour of choice, sifted
  • 1 egg, whisked
  • 2/3 cup almond milk
  • 1/3 cup vanilla Cocobella coconut yoghurt
  • 1 tbs maple syrup
  • 1 tsp vanilla essence
  • 1/2 tsp baking powder



  1. Add dry ingredients to a bowl and combine
  2. In a separate bowl combine the wet ingredients
  3. Add the wet ingredients to the dry and stir until just combined
  4. Pour mixture into an oiled frypan and cook on both sides until golden brown
  5. Serve topped with cocobella yoghurt, fresh strawberries and shredded coconut
