French Toast with Coconut Berry Jam

Berry Jam

  • 1 cup blueberries
  • 1 tablespoon tapioca starch
  • 1 tablespoon Cocobella coconut yoghurt


French Toast

  1. Mix together ingredients and soak 2-3 pieces of your favourite bread into the mix.
  2. Pan fry in coconut oil (and top with your toppings of choice, if you’d prefer that to the berry jam!).

Berry Jam

  1. Microwave blueberries with a dash of water until soft.
  2. Mash.
  3. Stir in tapioca starch.
  4. Let it sit in fridge for 5-10 minutes.
  5. Add Cocobella coconut yoghurt.

Serving suggestion: enjoy the french toast with peanut butter, fresh banana, cacao nibs and puffed grains.
