Easy Bounty Bars

  • Total: Prep time 20 mins (4 hours setting time all up).
  • Serves: 7 x small bites

Ingredients

  • 1 1/4 cup desiccated coconut⠀
  • 1/4 cup maple syrup or rice malt syrup⠀
  • 1/4 cup Cocobella Vanilla Coconut Yoghurt⠀
  • 1 tbs vanilla protein powder ( optional)⠀
  • Small pinch salt⠀
  • 100g dark chocolate (70%)⠀ ⠀

Method

  1. Add all the ingredients into a bowl and mix until combined. Line a tray with baking paper, shape the mixture into 6-7 small bars and space apart on the lined tray in the fridge for 2-3 hours to set. ⠀ ⠀
  2. Once hardened, melt your chocolate in a small microwave safe bowl for approximately 1-2 minutes ( stopping frequently) until fully melted. ⠀ ⠀
  3. Working one by one, dip your coconut bar into the chocolate with a fork and spoon chocolate over the top with a small spoon until fully coated. ⠀ ⠀
  4. Tap on the bowl slightly to remove excess chocolate and transfer to your lined tray. ⠀ ⠀
  5. Allow to set in the fridge for 30 minutes. Once chocolate has hardened, drizzle with an extra layer of chocolate and place back in the fridge to set for 1 hour. Enjoy!
