Coconut Yoghurt French Toast

  • 1/4 cup chickpea flour
  • 1 tbsp nutritional yeast
  • 1/8 tsp turmeric
  • 1/2 tsp mustard powder
  • 1/4 tsp garlic powder
  • 1/4 tsp ground black pepper
  • 1/2 tsp Indian Black Salt*
  • 1/4 cup Cocobella Natural coconut yoghurt
  • 1/4 cup water
  • 2-3 thick slices bread
  • 1 tbsp vegan butter or oil, to fry

*NOTE: I use Indian Black Salt (Kala Namak) in this French Toast because it helps to give. Find it at Indian grocery stores, and you can also get it online at places like The Cruelty Free Shop (in Australia). You can also just leave it out and use regular salt to taste.


  1. Mix the dry ingredients together to combine.
  2. Add the coconut yoghurt and water to the dry ingredients, and mix well.
  3. Soak bread in mixture, and flip to coat both sides.
  4. Melt butter in a fry pan over medium heat and once almost melted add the bread slices.
  5. Fry for 3-4 mins on both sides, or until golden. (Lift and check, you don’t want it to burn!).
  6. Once golden, take off heat and tuck in! Slice it, leave it whole, serve it with chutney or sauce.
