Coconut Yoghurt Breakfast Parfait

Ingredients

3 tbsp. chia Seeds
3/4 cup coconut milk
1/2 cup frozen raspberries
1/2 cup frozen blueberries
3 tbsp. Cocobella Coconut Yoghurt – Natural
1/2 cup granola

To serve
Kiwifruit
Coconut flakes
Fresh strawberries
Buckinis
Passionfruit pulp

Method

Breakfast: it’s the most important meal of the day, so why not make it a mouth-watering treat that fuels your body all day long? Tahlia of @rawganic_ shares this easy and super fruity breakfast recipe that will have you skipping out the door. Enjoy!

The day before serving, place chia seeds in an airtight container and add coconut milk, stirring well to combine. Secure lid and place in fridge overnight to set.

The next day, remove chia mixture from the fridge and divide into two even portions. Blitz one-half of the mixture in a blender with frozen raspberries and the other half with the frozen blueberries.

To serve, layer chia mixtures, granola and coconut yoghurt into a glass or jar. Serve with fresh strawberries, buckinis, coconut flakes, kiwifruit and passionfruit. Enjoy!
