Coconut Tzatziki with Chickpea Flatbreads

Ingredients

Flatbread

  • 1 cup chickpea flour
  • 1/2 cup tapioca flour
  • 1 cup water
  • Drizzle of garlic olive oil

Coconut tzatziki

  • 1/2 a cucumber, grated
  • 4 tbsp Cocobella coconut yoghurt
  • Drizzle of garlic olive oil
  • Juice of half a lemon
  • Handful of fresh parsley
  • Mint
  • Salt & pepper

Method

  1. Combine the flatbread ingredients in a bowl
  2. Heat a frying pan, then pour in 3-4 tbsp of flatbread mixture
  3. Cook for 3-5 mins on each side, repeat
  4. Combine the tzatziki ingredients in a bowl, store in the fridge until serving
  5. Serve with veggies, salad & protein
