Coconut Tzatziki with Chickpea Flatbreads
The Coconut tzatziki dip is fresh and vibrant and the chickpea flat breads are great for dunking in. The perfect nibble to serve before a dinner party.

Ingredients
Flatbread
- 1 cup chickpea flour
- 1/2 cup tapioca flour
- 1 cup water
- Drizzle of garlic olive oil
Coconut tzatziki
- 1/2 a cucumber, grated
- 4 tbsp Cocobella coconut yoghurt
- Drizzle of garlic olive oil
- Juice of half a lemon
- Handful of fresh parsley
- Mint
- Salt & pepper
Method
- Combine the flatbread ingredients in a bowl
- Heat a frying pan, then pour in 3-4 tbsp of flatbread mixture
- Cook for 3-5 mins on each side, repeat
- Combine the tzatziki ingredients in a bowl, store in the fridge until serving
- Serve with veggies, salad & protein
