Coconut Berry Quinoa Bircher

  • Total: 15 prep, overnight setting
  • Serves: 4


2 cups of quinoa flakes
1 apple grated
1 tsp of stevia powder
3 tbsp of sunflower seeds or other nuts/seeds
1 tsp of cinnamon
1 cup of Cocobella Straight Up coconut water
1 1/2 cup of soy milk or nut milk
1 cup of frozen raspberries or berries of your choice
4 tbsp of your choice of berry jam
8 fresh strawberries sliced, for garnish


  1. Mix all the dry ingredients together in a large bowl, and then add in the apple, coconut water, nut milk, and frozen berries. Mix until well combined. Make sure to keep some nuts for garnish when serving in the morning.
  2. Place jam in the bottom of jars or serving dishes.
  3. Fill the dishes with the bircher mixture and allow to set overnight in the fridge.
  4. To serve, garnish with fresh strawberries and crushed nuts.
