Cocobella Pancakes with Strawberry Topping
We love Emma Fabre's easy-peasy pancake recipe for those breakfasts where a smoothie won't cut it!

Ingredients
- 1 cup coconut water
- 1 tbsp apple cider vinegar
- 1 cup all purpose or whole wheat flour/ blended oats
- 1 tsp of baking powder
- 1 tbsp coconut sugar (optional)
- 1/2 scoop of vegan protein (optional)
- 1/2 ripe banana
Method
- Mix all dry ingredients, then slowly add water and apple cider vinegar. Let the batter sit for at least 5 minutes as the oats will soak up a lot of the liquid. If needed, add more coconut water to the batter.
- Coat pan with half a tea spoon of coconut oil, (I also recommend a non-stick pan) and let it warm up. Add a palm sized batter mix into pan and
let cook for 1-2 min until bubbles are formed, then flip over for another 1-2 min.
- Stack your pancakes like a pro and coat them in whatever you love! My current obsession is PB powder blended with dragonfruit accompanied by a (huge) dollop of Cocobella yogurt!
- Voila! A breakfast fit for a queen/king!
