Cauliflower Tacos with Coconut Lime Dressing

Ingredients

Cauliflower tacos:

6-8 Soft taco tortillas (use corn tortillas for gluten free)

½ Head of cauliflower

1 Red capsicum finely sliced

¼ Purple cabbage finely sliced

3 Spring onions (green parts only) chopped

3 tbsp Cocobella Natural Coconut Yoghurt

1 tbsp Cumin powder

1 tsp Chilli powder

1 tsp Smoked paprika

½ tsp Coriander seeds

 

Coconut Lime Dressing:

2 tbsp Cocobella Natural Coconut Yoghurt

Juice and rind of 1 lime

Salt and pepper to taste

Method

Preheat your oven to 200°C and line a baking tray with baking paper. Chop the cauliflower into small florets, prepare all other vegetables and place aside.
In a medium bowl, mix Cocobella Natural Coconut Yoghurt with the herbs and spices until combined. Add in the cauliflower florets and stir to coat with spiced yoghurt mixture. Lay out the cauliflower onto a baking tray and bake for 25 minutes or until the pieces are soft.

When your cauliflower is almost ready, warm up the tortillas and make Coconut Lime Dressing by combining all the ingredients and mixing.

Fill your tortillas with the prepared capsicum, cabbage and spring onion, and top with spiced cauliflower and the yoghurt dressing. Enjoy!
