Ingredients
Chia Pudding
- ¼ cup chia seeds
- ¼ cup Cocobella natural coconut yogurt
- ¾ cup unsweetened almond milk
- 1 tsp vanilla extract
- Optional: 1-2 tsp maple syrup (can omit as this will be served with a sweet jam)
Jam
- 150g or 1 cup of fresh blackberries
- 1 tbsp maple syrup
- 1 tbsp lemon juice
- Zest of 1 lemon
- 1 tbsp chia seeds
Method
- In a bowl, combine all the chia pudding ingredients and whisk well. Cover and place in the fridge for 2 hours or until thickened.
- Add the fresh blackberries into a small bowl and mash with a fork or potato masher. Add in the remaining ingredients and mix well. Cover and also pop into the fridge to set.
- When ready to serve, add a layer of granola or buckwheat (for a crunchy element) the bottom of 2 glasses. Top with Cocobella coconut yogurt, blackberry jam and chia pudding. Decorate with your favourite toppings and serve immediately!
