Blackberry & Lemon Chia Pudding

Chia Pudding

  • ¼ cup chia seeds
  • ¼ cup Cocobella natural coconut yogurt
  • ¾ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • Optional: 1-2 tsp maple syrup (can omit as this will be served with a sweet jam)


  • 150g or 1 cup of fresh blackberries
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • Zest of 1 lemon
  • 1 tbsp chia seeds


  1. In a bowl, combine all the chia pudding ingredients and whisk well. Cover and place in the fridge for 2 hours or until thickened.
  2. Add the fresh blackberries into a small bowl and mash with a fork or potato masher. Add in the remaining ingredients and mix well. Cover and also pop into the fridge to set.
  3. When ready to serve, add a layer of granola or buckwheat (for a crunchy element) the bottom of 2 glasses. Top with Cocobella coconut yogurt, blackberry jam and chia pudding. Decorate with your favourite toppings and serve immediately!
