These black forest waffles are super rich and chocolatey, almost brownie-like in texture and such a great pairing with cherries and vanilla coconut yoghurt.
1 tsp white wine vinegar (can sub for apple cider vinegar)
1 tsp vanilla extract
Toppings:
Fresh cherries
Coconut yoghurt
Chocolate chunks
Method
Add your flours, cocoa powder, sugar, baking soda, baking powder and salt to a bowl and whisk well to combine.
Thaw the frozen cherries in a saucepan until soft and add to a blender with plant-based milk, vinegar, vanilla and yoghurt. Blend until smooth.
Pour the wet into the dry and whisk to combine.
Preheat your waffle iron and grease with some oil or plant-based butter.
Pour in about ⅕ of the mixture (the exact amount will depend on your waffle iron so just use as much as you think is right) and cook until there is no longer any steam coming out of the sides of the iron, this means the waffle has cooked through.
Remove the waffle and place on a cooling rack. Repeat the process until you run out of batter.
Serve with some vanilla coconut yoghurt, chocolate chunks and fresh (or thawed) cherries.
