One of the highlights of our month is checking the #cocobellarecipe tag and choosing five recipes from you creative souls to feature. This month we were wowed by the presentation skills of @rachel.nordhus and the beat the heat food prep tips from @ekuaannobil. We basically wanted to jump into our screens to try the tiramisu from @eb.fitness. If you make nothing else this month then please try this recipe!! Special mention to @peacock_warrior for her always amazing smoothies and the Rocky Road Bliss Balls from @lilyturtonfit were so festive. Check out her other recipes, she is definitely one to watch. @rachel.nordhus – Overnight Chia Pudding
Ingredients
- 2 cups unsweetened almond milk
- 2 tbsp maple syrup
- 2 tsp vanilla extract
- 1 tbsp fine desiccated coconut
- 1/2 cup black & white chia seed mix
To Serve
- @purecocobella coconut yoghurt with passionfruit
- Strawberries, passion fruit, coconut flakes, puffed amaranth, passion fruit coulis, edible flowers. (to serve)
Method
- Add the liquids to a bowl/jar or air-tight container & stir until well combined. Add the desiccated coconut & chia seeds, stir for a minute or so. Pop in fridge, after 15 minutes give it another stir, cover & then leave over night.
To serve: put the following in your bowl ~ Overnight Chia Pudding, @purecocobella coconut yoghurt with passionfruit, strawberries, passion fruit, coconut flakes, puffed amaranth, passion fruit coulis, edible flowers.
@peacock_warrior – Mango, Coconut & Banana smoothie!
Ingredients
- 2 cups frozen banana
- 1 fresh organic mango
- 1 cup @goodbetterbruce almond milk
- 1 scoop @sunwarrioraus organic vanilla protein powder
- 150g @purecocobella coconut yoghurt
- 2 pitted medjool dates
- 1/4 tsp vanilla powder
Method
- Blend all ingredients until completely smooth and then pour into a cup.
@eb.fiitness – Raw Vegan Tiramisu Recipe
Elise created these for Christmas but they are perfect at anytime of year and she tells us they are the best thing she has EVER made.
BASE:
- 6 @shelbys_hh Cacao hazelnut cookies (available from the supermarket)
- 1 cup almond meal
- 1 tbsp coconut oil, melted
- 1 tbsp pure maple syrup
- 2 tbsp almond milk
Method
- Blend all ingredients in a blender or food processor until smooth. Transfer into a silicone pan or lined baking tray and press down firmly to form the base. Place in the freezer and move onto the Mouse Layer.
CHOC MOUSSE LAYER:
- 1 cup cashews, soaked for 3 hours (the discard water)
- ½ cup @purecocobella coconut yoghurt
- ½ cup dates, soaked (then discard water)
- ⅓ cup cacao powder
- 2 tbsp pure maple syrup
- ⅔ cup @minorfigures Cold Brew Latte OR sub 2 tsp instant coffee + almond milk
- 2 tbsp coconut oil, melted
- 1 tsp instant coffee (optional, if you like a stronger coffee taste!)
Method
- Blend all ingredients in a blender and pour over the base (this will make extra filling so only use as much as you need). Smooth out and place in the freezer to set for 1 hour.
CREAM LAYER:
- ½ cup cashews, soaked for 3 hours (and discard water)
- ½ cup @purecocobella coconut yoghurt
- 1 tbsp coconut oil, melted
- 2 tbsp maple syrup
- 1 tsp @heilalavanilla (or any vanilla essence)
Method
- Blend all ingredients in a blender and pour over the mousee layer. Smooth out and place in the freezer to set for minimum of 4 hour before serving. Before serving, dust top with cacao powder!
@lilyturtonfit – Rocky Road Bliss Ball
These are the perfect Christmas snack when your trying to be a little more healthy this silly season.
Ingredients
- 80g pistachio
- 100g walnuts
- 100g roasted walnuts
- 1/3 cup goji berries
- 15 majoul dates
- 1/3 cup cocoa
- 1 tbsp honey
Method
- Soak dates and goji berries in boiling water for 20 minutes.
- Place the ingredients into your processor and blend at high speed until the mixture resembles a sticky, textured crumb. The mixture is ready when it does not crumble when you use your hands to press and shape it into a ball. It should be easy to work with.
@ekuaannobil – Ekua’s Cooling Coconut and Chilled Fruit Bowl
This is one more an ode to food prep than a recipe. On hot days Ekua makes sure she has cut up fruit in the fridge with her iced water and when she gets hungry she assembles a fresh and fruity bowl.
Ingredients
- Chilled Cocobella Coconut Yoghurt (natural)
- Chilled pineapple pieces
- Chilled strawberries (sliced)
- Chilled blueberries
- Chia seeds
Method
- Assemble when hunger strikes on hot days. Serve with a tall glass of iced water.
